Fish, Oh how I love fish! I am such a seafood fiend! I eat more fish than other proteins these days. Let’s start with tilapia, a firm favourite in Nigeria. I made a whole grilled tilapia over the weekend for lunch with some baby potatoes and it was divine. Here are some pictures and a recipe.
Ingredients
- Whole tilapia, cleaned
- 2 tbsp oyster sauce
- 1 tsp pepper
- 1 crushed garlic clove
- 1 onion, finely sliced and diced
- 1 tbsp. ground ginger
- 1tbsp lemon juice.
- Salt to taste
- Baby potatoes
Clean tilapia and make 2 slits on both sides. Season Tilapia with oyster sauce, garlic, onions, ginger, lemon juice, salt and pepper to taste, then refrigerate for a few hours to marinate before grilling.
Place in foil paper, cover with fresh onions and cut, boiled, baby potatoes. Wrap in foil paper and grill in oven for 4 – 5mins or until fish flakes easily.
And voila! Nom nom nom!
